Savory Homemade Crockpot Bolognese Sauce

Hearty. Savory. Meaty. This crockpot Bolognese sauce is going to be your new go-to sauce on a Sunday! Made with pork ribs, sausage and ground beef, this hearty sauce will surely fill you up quicker than you think! You know this is a great recipe when Grandma Rita and Grandpa Claude approve.


Ingredients

  • 6 lb country style ribs (on bone)
  • 1 lb ground beef (80/20)
  • 1/4 lb medium Italian ground sausage
  • 1 medium onion
  • 6 cloves garlic (minced)
  • Salt (to taste)
  • Pepper (to taste)
  • Veggie oil (1/8 c)
  • 34 oz water
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp garlic powder
  • 2 tbsp Italian seasoning
  • 29 oz crushed tomatoes
  • 58 oz tomato purée

Instructions

Day 1

  1. On a cutting board, place all ribs and generously salt and pepper on all sides.

  2. Place a large frying pan or skillet on the stove on medium low heat and add vegetable oil.

  3. Once the oil is heated, add seasoned ribs and braise on all sides.

  4. While braising, mince onion and garlic with a knife or if you have a mini food processor handy, you can use that to mince the onion and garlic.

  5. Remove ribs from pan and let rest on the cutting board.

  6. While resting, add ground beef and medium ground Italian sausage and begin to brown.

  7. In the same pan add the onion first and sauté for approximately two minutes and then and the garlic. Sauté until onion is almost translucent.

  8. Add in the crushed tomatoes and let simmer while cutting the ribs off the bone, approximately 10 minutes.

  9. Transfer the mixture in the pan to the crock pot and add one 29 oz can of purée.

  10. Add 34 oz water to the crock pot with spices and stir the Bolognese sauce together.

  11. Place the rib meat back into the pan and braise until chunks are browned on all sides. Add to the ribs to the crock pot and stir into the meat sauce.

  12. Place the crock pot on low heat and cook overnight for 10 hours.

Day 2

  1. After 10 hours, remove all grease from the top of the sauce and stir. Add in second can of purée and add additional water if necessary.
  2. Taste test the Bolognese sauce and if it is bland, gradually add additional salt until the right consistency is met.
  3. Place the crock pot on high for 4 hours to cook down further.
  4. Continue to stir periodically.
  5. Remove lid after 2 hours and continue to cook on high.
  6. Remove excess grease after the 4 hours is achieved on high.
  7. Set to warm and serve on a Sunday afternoon over a bed of pasta.

Notes

  • You may have three small bowls full of grease that you have to discard after cooking on low for 10 hours. This is because of all of the meats that are added. 
  • To reduce the amount of grease produced during cooking, you can use 90/10 ground beef instead of 80/20.
