Ingredients
- 1 1/2 c. self rising flour
- 1/2 tsp. cinnamon
- 1/8 tsp. nutmeg
- 2 eggs
- 1 tsp. pumpkin pie spice extract
- 1/4 c. pumpkin
- 2 tsp. vanilla
- 1/4 c. buttermilk
- 3/4 c. whole milk
- 1 tsp. salted butter
Instructions

Place a frying pan on the stove and heat on medium low.

While the pan is heating, mix together the flour, cinnamon, nutmeg, eggs, pumpkin pie spice extract, pumpkin, vanilla, buttermilk, and whole milk.

Once the batter is mixed, add the butter to the pan, ensuring the pan is coated.

After it is coated, place 1/4-1/2 cup of the batter in the pan and wait until bubbles start to form on the top of the pumpkin spiced hotcake.

As the bubbles start to flip the hotcake and cook until golden brown. Repeat this process until the batter is used up.

Plate and serve warm topped with blueberries, confectionery sugar, and warm maple syrup!
Notes
How to Freeze:
- Place any extras in a Ziploc freezer bag and place flat on a shelf. Freeze until you want to eat them again!
Thawing:
- Place the pumpkin spiced hotcakes on a plate, microwave on high for a minute and thirty seconds or two minutes, until de-thawed and hot, top with butter, blueberry syrup and a sprinkle of confectionery sugar.
