- 4–6 c. mixed greens
- 1/2 c. feta cheese
- 1/4 c. seasoned croutons
- 1/2 c. fresh raspberries
- 20 raw shrimp
- 2 tsp. salted butter
- 1 tsp. Symeon’s Greek seasoning
- 1/4 c. chopped walnuts
- 4 tbsp. cilantro lime dressing
- 1/2 lime
Instructions
Shrimp
- Place a frying pan on the stove and turn to medium low heat.
- While the pan is heating up, remove the shell from the shrimp and ensure they are deveined.
- If the shrimp are not deveined, remove the vein from the back of the shrimp using a small knife or pull out with your fingers.
- Place shrimp in a small bowl and add the Greek seasoning, stirring together until all shrimp are coated.
- Melt the butter in the pan and place the shrimp in the pan.
- Cook for approximately 1-2 minutes on each side until they turn pink.
- Transfer the shrimp to a plate.
Assembly
- Place even amounts of mixed greens into two separate medium size salad bowls.
- Sprinkle even amounts of croutons, walnuts, feta cheese, and raspberries in each bowl.
- Cut the half of lime in half and squeeze some of the juice over the salad.
- Place even amounts of shrimp on each salad.
- Drizzle the cilantro lime dressing over the top and serve.
