Zesty Raspberry Lime Greek Shrimp Salad

Ingredients

  • 46 c. mixed greens
  • 1/2 c. feta cheese
  • 1/4 c. seasoned croutons
  • 1/2 c. fresh raspberries
  • 20 raw shrimp
  • 2 tsp. salted butter
  • 1 tsp. Symeon’s Greek seasoning
  • 1/4 c. chopped walnuts
  • 4 tbsp. cilantro lime dressing
  • 1/2 lime

Instructions

Shrimp

  1. Place a frying pan on the stove and turn to medium low heat.
  2. While the pan is heating up, remove the shell from the shrimp and ensure they are deveined.
    1. If the shrimp are not deveined, remove the vein from the back of the shrimp using a small knife or pull out with your fingers.
  3. Place shrimp in a small bowl and add the Greek seasoning, stirring together until all shrimp are coated.
  4. Melt the butter in the pan and place the shrimp in the pan.
  5. Cook for approximately 1-2 minutes on each side until they turn pink.
  6. Transfer the shrimp to a plate.

Assembly

  1. Place even amounts of mixed greens into two separate medium size salad bowls.
  2. Sprinkle even amounts of croutons, walnuts, feta cheese, and raspberries in each bowl.
  3. Cut the half of lime in half and squeeze some of the juice over the salad.
  4. Place even amounts of shrimp on each salad.
  5. Drizzle the cilantro lime dressing over the top and serve.
