Who doesn’t love Sunday afternoon pasta dinners? It was a tradition growing up in my family that every Sunday, we would have some sort of pasta with sauce, some sort of meat, and homemade bread in the early afternoon. That tradition still occurs, but as the family has grown and people have busy schedules we try to maximize our time spent together by making this Simple Classic Alfredo Sauce recipe!
Cheesy. Creamy. Savory. It’s the delicious sauce your pasta has been waiting for! This classic alfredo sauce takes minutes to make and you can have a full meal created in under 20 minutes. The added parsley and oregano gives it a twist that will have your guest coming back for not just seconds, but thirds!
Alfredo suace originated in Rome, Italy in 1908 by a man named Alfredo di Lelio. After Lelio’s wife Ines gave birth, she found that nothing tasted well and had trouble eating. To help out his wife, Lelio created a simple and plain pasta dish called “pasta bianca”. To give it a little bit of flavor, he added some butter and a sprinkle ofparmesancheese.
Unfortunatley, the dish did not become popular in Italy, however in the United States it has evolved and become a staple in many Italian resturants. Many resturants serve it plain or with chicken or shrimp.
Ingredients
⅓ c. unsalted butter
1 c. heavy cream
2 ½ c. freshly gratedparmesanor half parmesan/half pecorinoromanocheese
2 large cloves garlic, minced
1 tsp. ground black pepper
1 tsp. chopped fresh parsley
½ tsp. freshly chopped oregano
1-1 ½ lb. fettuccine, linguine or spaghetti
Instructions
Pasta:
Bring water to a boil in a large pot and add a handful of salt to the water.
Add in pasta and cook until al dente, approximately 8-13 minutes.
Alfredo Sauce:
In a large pan with high sides, melt butter on low heat.
Once the butter is melted, mix in the minced garlic.
Increase the heat slightly and graciously pour the heavy cream into the pan while whisking to combine with the melted butter and garlic.
Continue to whisk as the mixture simmers for 5 minutes.
Add in the cheese and whisk quickly until all cheese is melted.
Mix in 1 tablespoon freshly chopped parsley, oregano and 1 teaspoon ground black pepper.
Assembly:
Once mixed, use tongs to remove all the fettuccine and place directly into the alfredo sauce.
Mix together so all pasta is coated with the cheese mixture.
Transfer to a serving bowl and top with extra fresh parsley, ground black pepper, and grated parmesan cheese.

Any type of grilled or crispy chicken or grilled or sauteed shrimp pairs well with Fettucini Alfredo!
What types of cheese is best to use with Alfredo sauce?
Parmesan, romano, and pecorino romano cheeses are all best to use when making your Alfredo sauce. Using a combination of two cheeses helps ensure its not overpowered by one cheese flavor and adds dimension to the flavor.
What other pasta types can I use?
Penne and linguine are best to use with Alfredo sauce.
Savings Tip
If you use half of the bricks of cheese for the sauce, then you will have enough left over for a second meal! Casaro cheeses hold extremely well, especially if stored in an airtight container. You can use the other half bricks of cheese to make another batch the following week or incorporate it into other dishes you may be cooking throughout the week.
