These greek-insprired feta home fries are going to have you singing before you even take a bite. You roll out of bed, hair looking like you just got electrocuted, but you put that hat on or throw your hair in a bun because you are all business this morning.
You race to the pantry because you can’t contain your excitement. The red potatoes are on the bottom shelf calling your name. You grab a few and go to the kitchen, cuing Alexa.
“Alexa, play What You Got by Colby O’Donis”. Now you are ready to rock and roll.
You fork the potatoes and put them in the microwave. While the potatoes are cooking you start grooving while chopping the garlic and fresh herbs. Colby O’Donis has got you going this morning!
You place your frying pan on the stove and crank the heat to medium-low and add the oil, prepping the pan for the sizzle action that’s about to take place. Placing the potatoes on your cutting board, you chop them into one inch cubes then transfer them to the pan. Listen to that sizzle action! It’s like music to your ears.
You add the garlic and continue to flip the potatoes until they start to turn a beautiful golden brown. Once browned, you add in the herb, toss the mixture together and then get ready to add that feta cheese!
FETA-TASTIC
Who doesn’t love feta cheese?! Feta is one of my all time favorites to top on pasta, salads, and even broiled with herbs. Seriously yummy stuff. When trying to find wholesome and authentic ingredients for my recipes, I found that many of the feta cheeses that you find at the grocery store are not traditional feta, although they may say they are.
Yes you read that right. Many are not traditional feta! Traditional feta cheese is made solely from sheep’s milk. In some instances its made solely from goats milk, depending on the region. In the United States, many feta cheeses are made with cows milk.
If you taste feta cheese that is made with sheep or goats milk and feta that is made with cows milk, you will experience a noticeable difference in taste!! So next time you’re at the market, be on the look for feta made with sheep or goats milk. You won’t be disappointed!
Simple. Crispy. Cheesy. These feta home fries are going to be on your list to cook for breakfast tomorrow! They are super simple to make and can be paired with eggs your way and your choice of meat for a slammin’ breakfast all under 20 minutes!
Ingredients

2–3 small red potatoes
1 tbsp. feta cheese, crumbled
2–3 tbsp. extra virgin olive oil
2 cloves garlic, minced
1/2 tsp. parsley, chopped
1/2 tsp. oregano, chopped
1/4 tsp. thyme, chopped
1/2 tsp. onion powder
1/4 tsp. salt
1/4 tsp. pepper
Instructions
Using a fork, poke your potatoes on all sides and then place on a plate.
Put the potatoes in the microwave on high for about 6 minutes or until the potatoes are soft to touch.
As your potatoes are in the microwave, place a frying pan on your stove and turn the burner to medium-low heat and chop up the garlic and fresh herbs.
Once the potatoes are softened, place the potatoes on your cutting board and dice into 1-2 inch cubes.
After the potatoes are diced and your herbs and garlic are chopped, pour the extra virgin olive oil into your pan and place the potatoes in the oil once the oil is hot.
As the potatoes are sizzling, add the garlic and continue to sauté the garlic and potatoes, flipping the potatoes until each side is golden brown.
Add in herbs, salt and pepper and continue to sauté for one minute.
Transfer your potatoes to your place and top with extra fresh parsley and lots of feta cheese.
Notes
The potatoes may still be hot to touch when removed from the microwave. Use a fork to hold them while cutting to prevent burning your fingers.
