Spoiler alert! Julius did not make this Caesar salad, but it’s just as good as if he made it in 74 BC for his wife Cornelia. Scratch that. This Caesar salad is 100x better than what you would find in 74 BC.
Since you want to out-do Mr. Caesar on this fine Wednesday, you grab your cutting board and meat cleaver so you can start pounding out those chicken tenders that are calling your name. Before pounding out the chicken, you place a frying pan on the stove and turn the heat to medium low.
After the chicken is pounded out to about a 1/4 inch thick, you ground the bread crumbs in a Ziploc back by crushing them with your bare hands and then transfer them to a plate. You mix in the luscious Romano cheese and herby Italian seasoning to add a little kick to those plain panko crumbs.
I always keep bricks of Casaro parmesan and romano cheeses in the refrigerator for times like these. One brick of the parmesan or romano cheese finely grated equates to two and a half cups. For this recipe, I love switching it up from the classic and add Romano cheese instead to add a different taste.
Then you crack an egg in a shallow bowl and scramble slightly with pepper. Now you are ready to bread those juicy pieces of meat! You dunk the meaty tenders into the egg wash and then transfer the tenders into the crumb mixture, coating all sides.
Once the tenders are breaded, you place them in the fry pan and turn the oven on broil. As the tenders are frying, you wash the romaine and pat dry with paper towels, placing in a large bowl when finished.
After the tenders are golden brown, you place them on a wire rack on a cookie sheet, then place in the oven to get extra crispy for one to two minutes. Once extra crispy, you remove them from the oven and let cool.
You chop those juicy, crispy tenders once cooled and place on top of the bed of romaine. You drizzle the Caesar dressing over the top and add the rest of the Romano cheese and lots of seasoned croutons. Now you’ve officially created the best Caesar salad ever!
Crispy. Juicy. Extra. This is everything that you could imagine a Caesar salad could be. Tons of Romano (forget the Parmesan), extra crispy chicken, and more Caesar dressing than your taste buds can handle. Time to get after it!
Put a frying pan on the stove burner and turn the heat to medium-low.
Place the chicken tenders on a cutting board and use a meat cleaver to pound the chicken until it is about a 1/4 inch thick.
Once the chicken is pounded out, pour the olive oil in the pan and let heat.
As the oil heats up, place your panko breadcrumbs in a Ziploc bag and crush until fine.
Pour onto a plate and add 1/8 c. Romano cheese and Italian seasoning, mixing together with a fork.
Crack the egg in a separate shallow bowl and scramble with your fork.
Place the chicken in the egg mixture, coating all sides, then place in the breadcrumbs, coating all sides.
After the chicken is breaded, place in the pan and begin to fry. As the chicken is frying in the pan, turn your oven on broil and let heat up.
Fry the chicken in the pan until golden brown, transferring to a wire rack on top of a cookie sheet.
While the chicken is frying, wash the romaine, pat dry using paper towels, and then place in a large bowl.
Once all the chicken is done frying, place in the oven to broil for one to two minutes on each side to make them extra crispy.
Remove from the oven and let cool on the rack for five minutes.
After the chicken is cooled, transfer to a cutting board and chop into pieces.
Place the chicken on top of the greens once chopped and drizzle the Caesar dressing over the top.
Add the rest of the Romano cheese and lots of seasoned croutons.
